roasted eggplant dip
- 1/2 cup The Gracious Gourmet Roasted Eggplant Tapenade
- 2 tablespoons mayonnaise
- 1/2 teaspoon fresh minced garlic
- Pita chips and assorted crudite for dipping
- Combine Roasted Eggplant Tapenade, mayonnaise and garlic, stir together until smooth.
- Cover and refrigerate at least 30 minutes to allow flavors to blend.
- Serve with pita chips and assorted crudite.
Note: Dip can also be used as a sandwich spread.
