peach apricot roast chicken
|
| 3 fresh rosemary sprigs |
| 1 roasting chicken (about 5-1/2 pounds) |
| 1/2 large onion, chopped 3/4-inch |
| Extra virgin olive oil |
| Salt and freshly ground black pepper |

| 1 jar (9.5 ounces) The Gracious Gourmet Peach Apricot Spread |
|
Place rosemary sprigs inside chicken. Scatter onion on bottom of small roasting pan. Place chicken on top of onion. Brush some olive oil on top of chicken; sprinkle with salt and pepper. Pour ½ cup water into bottom of pan. Roast at 350°F., 1 hour. Top with enough Peach Apricot Spread to cover. Cook another 20 – 30 minutes, or until internal temperature of thigh is 160°F. Let stand 5 minutes before carving. Serve with additional warmed Peach Apricot Spread.
Makes 4 to 6 servings.
