peach apricot roast chicken

3     fresh rosemary sprigs
1     roasting chicken (about 5-1/2 pounds)
1/2 large onion, chopped 3/4-inch
       Extra virgin olive oil
       Salt and freshly ground black pepper
1     jar (9.5  ounces) The Gracious Gourmet Peach Apricot Spread


Place rosemary sprigs inside chicken.  Scatter onion on bottom of small roasting pan.  Place chicken on top of onion.  Brush some olive oil on top of chicken; sprinkle with salt and pepper.  Pour ½ cup water into bottom of pan.  Roast at 350°F., 1 hour.  Top with enough Peach Apricot Spread to cover.  Cook another 20 – 30 minutes, or until internal temperature of thigh is 160°F.  Let stand 5 minutes before carving.  Serve with additional warmed Peach Apricot Spread.

Makes 4 to 6 servings.
